Club Gascon, Smithfield
Bespoke joinery for the 2017 relaunch of a Michelin-starred London restaurant.
Club Gascon was one of London’s most quietly influential French restaurants — a Michelin-starred room opposite Smithfield Market where chef-patron Pascal Aussignac reimagined the cooking of his native Gascony for nearly three decades.
It opened in 1998 in a former Lyon’s tea house, won its Michelin star in 2002, and held it to the day it closed. In 2017, after almost twenty years, the restaurant shut for its first full refurbishment: the kitchen was extended, the basement opened up, and the dining room reworked in marble panelling, velvet and mirror in tones of blue, silver and gold.
MSO Joinery carried out the bespoke joinery for that fit-out — the panelling, the bar and the fitted detail that gave the new interior its finish — made in our Poole workshop and installed in the City.
It was a happy job. With the restaurant closed for the works, Pascal would cook the team lunch while we fitted — a Michelin chef feeding the joiners is not something you forget, and it says everything about the way we like to work: people who respect one another’s craft.

The curved bar and the fitted joinery were set out and built at our bench in Poole, then delivered and installed on site in the City — worked around the restaurant’s programme so it could reopen on schedule.

The finished room
The reopened dining room traded to warm national press until the restaurant closed for good in March 2026, after almost three decades and a Michelin star held from 2002 to the end.
